A Bowl of Comfort Filipino Beef Sinigang
A Simple, Savory Taste of Home
Simple ingredients come together to create the tangy, comforting bowl of Filipino Beef Sinigang. From tender beef and fresh vegetables to that unmistakable tamarind broth, every element plays its part. Whether it’s a rainy afternoon or the middle of summer, this dish proves that comfort food has no season.
Ingredients:
1 and a half lbs beef chunks, brisket, or short ribs
1 medium tomato, quartered
1 white onion quartered
1 eggplant sliced
Okra 6 to 8 pieces
1 cup green beans trimmed
1 bunch bok choy or pechay leaves separated
1 cup spinach leaves
1 pack tamarind soup mix, Knor,r or Mama Sita
6 cups water
Salt and pepper to taste
(My mom didn’t measure, but helped me with this. always season to taste)
Instructions:
Boil the base
Add water, beef, tomato, and onion to a large pot
Simmer until beef is tender, about 45 minutes to 1 hour
Skim off any foam that forms on topAdd flavor
Stir in the tamarind soup mix until dissolved
Taste and adjust the sourness to your likingAdd vegetables
Add eggplant, okra, and green beans
Cook until tender, about 5 to 7 minutesFinish with greens
Turn off the heat, then add spinach and bok choy
The heat of the soup will soften them just rightServe with rice, always rice
Pour the broth over your bowl and enjoy pure comfort
