Easy Sweetgreen Inspired Bowl


Your favorite bowl, at home!

Love Sweetgreen but want a homemade version? This Easy Sweetgreens-Inspired Bowl is a delicious, nutritious meal packed with bold flavors and wholesome ingredients. It’s perfect for meal prep or a quick, satisfying lunch!

Always remember to make your Sweetgreens-Inspired Bowl with the ingredients you love!

(Measurements are not given due to what you enjoy)

Ingredients:

  • Chopped Kale

  • Sweet potatoes (fresh or frozen)

    • My Seasonings

      • Olive oil

      • Black Pepper

      • Onion Powder

      • Cinnamon

      • Nutmeg

  • Brown & Wild Rice (or rice of your choice)

  • Turkey meatballs (homemade or frozen, or protein of choice)

  • Goat cheese

  • Balsamic Vinaigrette Dressing

Instructions:

  1. Roast the Sweet Potato: Preheat the oven to 400°F, or you can use your air fryer. Make sure that your sweet potatoes are diced. Toss with olive oil, pepper, onion powder, nutmeg, and a dash of cinnamon. Roast for 20-25 minutes until tender.

  2. Prepare the Base: In a bowl, massage the kale with a small amount of balsamic vinaigrette to soften it.

  3. Assemble the Bowl: Add cooked brown & wild rice, turkey meatballs, and roasted sweet potatoes to the kale.

  4. Finish with Toppings: Add your goat cheese on top and drizzle with the remaining balsamic vinaigrette.

  5. Enjoy: Mix everything together and dig in!
