Ingredients:
Chopped Kale
Sweet potatoes (fresh or frozen)
My Seasonings
Olive oil
Black Pepper
Onion Powder
Cinnamon
Nutmeg
Brown & Wild Rice (or rice of your choice)
Turkey meatballs (homemade or frozen, or protein of choice)
Goat cheese
Balsamic Vinaigrette Dressing
Instructions:
Roast the Sweet Potato: Preheat the oven to 400°F, or you can use your air fryer. Make sure that your sweet potatoes are diced. Toss with olive oil, pepper, onion powder, nutmeg, and a dash of cinnamon. Roast for 20-25 minutes until tender.
Prepare the Base: In a bowl, massage the kale with a small amount of balsamic vinaigrette to soften it.
Assemble the Bowl: Add cooked brown & wild rice, turkey meatballs, and roasted sweet potatoes to the kale.
Finish with Toppings: Add your goat cheese on top and drizzle with the remaining balsamic vinaigrette.
